VoiceInk turns speech into text with Whisper models running locally, so nothing is uploaded and it keeps working offline. A global shortcut dictates into whatever app is in front, punctuation is tidied as you go, and the model can be swapped for accuracy or speed. The developer released the source after selling it, and a ready-built version is still for sale.
